Tofu Scrambler Wrap Recipe


  • 1 green pepper, chopped
  • 1 small onion, chopped
  • ¼ cup vegetable broth
  • 1 (12-oz.) package extra firm tofu, drained and pressed
  • 1 t. chili powder
  • 1 t. ground cumin
  • 1 t. turmeric
  • 2 cups fresh spinach, more or less to taste
  • ½ cup salsa
  • 4 whole wheat tortillas


Cook onion and pepper in broth until translucent. Crumble tofu in your hands and add along with chili powder, cumin and turmeric. Saute, stirring for 5-7 minutes, or until done to your liking. Add spinach and cook 1 minute. Add salsa and stir. Serve in warm tortillas.
