Texas Brisket Chili

3-4 lbs. beef brisket

4 slices bacon

Kosher salt to taste

Pepper to taste

Onion powder to taste

2 cups diced white onion

1 T. paprika

1 T. ground cumin

3 ½ T. chili powder

½ t. thyme

½ t. salt

5 cloves garlic, minced

1 quart beef broth

½ cup strong black coffee

1 (28 oz.) can whole tomatoes in juice

Cook’s Notes: Serve topped with shredded cheddar cheese,
minced onion and corn chips.

Editor’s Note: May want to adjust chili powder to taste.
