Summer Zucchini Stew
Summer Zucchini Stew Recipe
- 1 lb. beef for stew
- 1 lg. onion, chopped
- 2 T. olive oil 3 zucchini (2-inch diameter), sliced
- 1 T. lemon juice
- 1 T. powdered cinnamon
- 1⁄2 cup water
- Salt and pepper to taste (optional)
Brown 1⁄2 inch cubed beef in 1 T. oil in skillet. Remove beef. Brown onion in remaining T. oil. Add beef back to skillet. Add sliced zucchini and brown. Add remaining lemon juice, cinnamon and water to skillet. Cover, and lower heat for simmering. Simmer (approximately 1⁄2 hour until tender). Watch carefully and add water if needed. If desired, season with salt and pepper to taste. Serve stew over hot cooked rice.
