Red Velvet Butter Cookies

Ingredients

  • 1 (8-oz.) block cream cheese, softened
  • 4 T. butter, softened
  • 1 egg
  • 1 T. red food coloring
  • 2¼ cups flour
  • 2 cups sugar
  • 2 T. baking cocoa powder
  • 2 t. baking powder
  • ¼ t. salt
  • 1 cup powdered sugar for dusting

Directions

Beat the cream cheese, butter and egg until well-blended. Add in the food coloring and mix until well-blended. In another bowl, mix the flour, sugar, cocoa powder, baking powder and salt. Slowly beat the dry ingredients with the cream cheese mixture until blended well. Chill the dough for two hours in the refrigerator. Take out and roll in balls the size of walnuts and roll in powdered sugar. Place balls on parchment paper and bake for 10–12 minutes at 350 F. Let cool and store in an air-tight container.

Cook's Notes

This makes a very moist cookie that is a good holiday treat. You can put icing and sprinkles on it, if desired. Don’t over-bake.
