Potato Casser-olé!

  • 4 T. butter
  • ½ cup chopped onion
  • ½ cup chopped green bell pepper
  • 8 oz. cream cheese, cubed
  • ¼ cup milk
  • 1 t. salt
  • ¼ t. black pepper
  • 1 t. chili powder
  • 4 cups thinly sliced, peeled potatoes
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped red pepper
  • ¼ cup green onions


In a heavy sauce pan or large skillet, sauté onions and green pepper in butter until tender. Turn heat to medium low and add cream cheese, milk, salt, pepper and chili powder. Stir until cream cheese is melted. Add potatoes and mix lightly to coat. Spoon into 10×6 inch baking dish. Bake at 350 F for 50-55 minutes or until potatoes are tender. Remove from oven and sprinkle with cheddar cheese. Return to oven for 3 minutes. Garnish by sprinkling on chopped red pepper and green onion.
