Portuguese Kale Soup
- 6 medium potatoes, peeled and cut into 2-inch chunks
- 1 pound smoked, skinless sausage, cut diagonally into 1-inch slices
- 1 small bunch kale, washed, stems removed and cut into small pieces
- 1 (15-oz.) can red kidney beans, rinsed and drained
Place potatoes and sausage in a large cooking pot and cover with 4 inches of water. Bring to a boil and simmer until the potatoes are partially done. Add kale and beans, and continue cooking until potatoes and kale are done.
“This soup can be made ahead and frozen. Portuguese kale soup is served in many restaurants on Cape Cod. We vacationed there and liked this version the best.”
