Pineapple Upside-Down Cake

Ingredients

  • ¼ cup butter
  • ½ cup packed brown sugar
  • 4 to 5 pineapple rings
  • 9 maraschino cherries
  • 1 cup all-purpose flour
  • 2/3 cup sugar
  • 1¼ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon vanilla
  • 1/3 cup shortening
  • 2 eggs
  • 1/3 cup milk

Directions

Place butter in a microwaveable 9-inch round baking dish. Cover with a paper towel and microwave on medium (50 percent) 40 to 60 seconds. Sprinkle brown sugar over butter. Arrange the pineapple rings in the baking dish. Place a maraschino cherry in the center of each pineapple ring. Cover dish with a paper towel or napkin and microwave on high (100 percent) for 4 minutes. Set dish aside.

Place all cake ingredients in a medium sized mixing bowl. Use an electric mixer and blend at low speed until well mixed. Then, beat at medium speed for 2 minutes. Carefully spoon cake batter evenly over fruit. Cover dish and microwave on medium for 6 minutes. Rotate dish a quarter turn at the three-minute mark. Microwave on high for 2½ to 8 minutes or until done.

Cook's Notes

Cook’s note: The cake is done when it pulls away from the sides of the pan and a toothpick comes out clean. Microwaved cakes do not brown like cakes baked in the oven do.
