Pickled Carrot Sticks

  • 1 lb. carrots
  • ¾ cup vinegar
  • ¾ cup water
  • ½ cup sugar substitute (saccharin)
  • 1 t. mixed whole pickling spice


Peel carrots and cut into sticks. Place in a dish for marinating. Combine vinegar, water, sugar substitute, and pickling spice in a saucepan. Bring to a boil. Simmer for 5 minutes. Pour hot liquid over carrot sticks. Cool and refrigerate overnight.

Cook's Notes

If you like a less intense sweet-sour taste, rinse the pickled carrots in cold water before serving.
