Mom’s Mashed Potato Doughnuts

Ingredients

  • 2 cups hot mashed potatoes (mashed with milk and butter)
  • 2½ cups sugar
  • 2 cups buttermilk
  • 2 eggs, lightly beaten
  • 2 T. butter or margarine, melted
  • 2 t. baking soda
  • 1 t. ground nutmeg
  • ½ t. salt
  • 6½ to 7 cups all-purpose flour (or more as needed)
  • Vegetable oil

Directions

In a large bowl, combine potatoes, sugar, buttermilk and eggs. Stir in butter, baking soda, baking powder, nutmeg, salt and enough flour to form a soft dough. Turn onto a lightly floured surface. Pat out to ¾-inch thickness. Cut with a 2½-inch floured doughnut cutter. In a Dutch oven, heat 2½ inches of vegetable oil to 375 F. Fry 4 to 6 doughnuts at a time, for about 2 minutes on each side. Place on paper towels to drain. Makes 4 dozen doughnuts. Decorate doughnuts as desired.
