Mexican Meatballs

  • 1 egg
  • ½ cup water
  • ½ t. salt
  • 1 (1.75-oz.) envelope chili seasoning mix
  • ½ cup cornmeal
  • 1½ lbs. ground beef
  • 2 cups tomato juice
  • 1 T. lemon juice


Preheat oven to 450 F. Combine egg, water, salt and 2 T. from package of chili seasoning mix. Mix lightly. Add cornmeal and ground beef. Shape into small meatballs. Arrange on an ungreased shallow baking sheet. Bake in oven for 10 to 15 minutes, until done. In a large skillet, combine remaining chili seasoning mix, tomato juice and lemon juice. Add meatballs and heat until simmering. Keep warm. Serve with toothpicks.

This was my children’s favorite, and they always ask me to fix these meatballs. Makes 27.
