Lots O’ Chocolate Bread

  • 2/3 cup brown sugar, packed
  • ½ cup butter, softened
  • 1½ cups mini chocolate chips, divided
  • 2 eggs
  • 2½ cups flour
  • 1½ cups applesauce
  • 1½ t. vanilla extract
  • 1 t. baking powder
  • ½ t. salt
  • ½ cup chocolate chips
  • 1 T. shortening


Preheat oven to 350 F. Grease five (5½-by-3-inch) mini loaf pans. Beat brown sugar and butter in large mixing bowl with electric mixer until creamy. Melt 1 cup mini chocolate chips; cool slightly and add sugar mixture with the eggs. Add flour, applesauce, vanilla extract, baking soda, baking powder and salt. Beat until well mixed. Sitr in remaining ½ cup mini chocolate chips. Spoon batter into prepared pans. Bake 35-40 minutes or until center cracks and is dry to the touch. Cool 10 minutes before removing from the pans. Place ½ cup chocolate chips and shortening in small microwaveable bowl. Microwave on HIGH for 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating until melted and smooth. Drizzle over warm loaves. Cool completely.
