Honey Orange Muffins
½ cup sifted all-purpose flour
¼ t. salt
2 t. baking powder
½ cup whole wheat flour
1 egg, well beaten
¼ cup orange juice
1 t. grated orange rind
½ cup honey
3 T. melted shortening
In a large bowl, sift all-purpose flour, salt and baking powder together. Add whole wheat flour and mix thoroughly. In another bowl, combine egg, orange juice, rind, honey and shortening. Add all at once to flour, stirring only enough to dampen all flour. Bake in well-greased muffin pan or use paper baking cups. Bake in hot oven at 400 F for 15-20 minutes or until browned.
Yield: 12 muffins.
