Ginger Peach Chutney

  • 1 cup apple cider vinegar

  • 4 T. fresh lime juice

  • 4 T. minced fresh ginger

  • 2 fresh jalapeño chiles, seeded and minced or ½ tsp. crushed red pepper

  • 8 T. minced shallots

  • 1 t. ground allspice
  • 1 t. ground cloves

  • 2 (½-inch) pieces of cinnamon stick

  • 1 cup raisins

  • 8 medium peaches, peeled, pitted, and quartered
  • 1 1/3 cups sugar


Mix together vinegar, lime juice, ginger, jalapeños or crushed red pepper, shallots, allspice, cloves, cinnamon stick and raisins. Mix in peaches. Stir in the sugar. Bring to a boil, then reduce the heat and simmer, uncovered, 30 minutes or until thickened, stirring occasionally. Remove cinnamon stick.
