Apple Cake with Brown Sugar Glaze

Fresh Apple Cake with Brown Sugar Glaze

  • 1½ cups flour
  • 1 cup sugar
  • ½ t. soda
  • ½ t. salt
  • ½ t. cinnamon
  • 2 eggs
  • ½ cup oil
  • 1 t. vanilla
  • 1½ cups finely chopped apples
  • ½ cup pecans or walnuts
  • Glaze (½ cup brown sugar, 3 T. butter, ½ t. vanilla, 1 T. heavy cream, 1 T. sugar dissolved in 1 T. milk for glaze)


In a bowl, mix flour, sugar, soda, salt and cinnamon. In another bowl, mix eggs, oil and vanilla. Combine flour mixture and egg mixture. Add apples and nuts. Stir to mix and put in 8-inch greased round pan. (Mixture will be thick.) Bake for 40 to 45 minutes at 350 F. For glaze, combine brown sugar, butter, vanilla and cream and gently boil for 3 to 5 minutes. Spoon over cake and let cool. Enjoy your fresh apple cake!
