Fiesta Turkey Soup Recipe


  • 1 med. onion, diced
  • 1 t. extra virgin olive oil
  • 2 garlic cloves, minced
  • 3 cups chopped leftover turkey
  • 1 can chili beans
  • 3 to 4 cups chicken stock
  • 1 can tomatoes with green chilies
  • 1 bag frozen chopped onion, green and red pepper blend
  • 1 cup frozen corn kernels
  • 1 t. chili powder
  • 1 t. ground cumin
  • Salt and pepper to taste
  • Toppings of sour cream, cheese and/or chopped cilantro


Sauté onions in extra virgin olive oil in a large Dutch oven until tender. Add garlic and sauté one minute. Stir in turkey and the rest of soup ingredients. Bring to a boil, stirring occasionally. Reduce heat and simmer 30 minutes. Serve with desired toppings.
