Curly’s Fish Coating
- Dry coating: 60 percent corn meal, 20 percent flour, 20 percent pancake mix
- Batter: ¾ cup flour, 1 t. baking powder, 1 t. dry mustard, 1 egg, pinch of salt and pepper, water (enough to make a batter)
Combine dry coating ingredients and set aside. Combine batter ingredients and set aside. Brush fish with mustard. Roll fish in dry mixture then dip in batter.
