Corn Salad

  • ½ cup olive oil
  • 2 T. brown mustard
  • 4 T. apple cider vinegar
  • Salt and pepper to taste
  • ½ t. cumin
  • 4 T. chopped cilantro
  • 2 cups frozen corn, rinsed
  • 1 Granny Smith apple, chopped
  • ½ medium red onion, chopped


Mix oil, mustard, vinegar, salt, pepper, cumin and cilantro together in a large bowl to make dressing.

Rinse the corn in warm water to remove the frost. Strain well to remove water. Combine with the apple, onion, and dressing, and chill in the refrigerator for a few hours before serving.

Serve with a slotted spoon to allow dressing to drain.

“The recipe calls for frozen corn, but you can boil or grill your own corn, cut it off the cob, and chill it before you finish the recipe.”
