Christmas Cranberry Bread Recipe


  • 2 cups all-purpose flour
  • 1⁄2 cup sugar
  • 1 1⁄2 t. baking powder
  • 1⁄2 t. salt
  • 1⁄2 t. baking soda
  • 1 egg, beaten
  • 3⁄4 cup orange juice
  • 1⁄4 cup butter, melted and cooled
  • 1 cup fresh or frozen cranberries, cut in pieces
  • 1⁄2 cup chopped walnuts


In a bowl, stir together flour, sugar, baking powder, salt and baking soda. Make a well in the center of the flour mixture. Add egg, orange juice and butter. Stir just until dry ingredients are moistened. Stir in cranberries and walnuts. Pour batter into greased and floured 5-by-9-inch loaf pan. Bake at 350 F until bread is golden brown on top and a wooden pick comes out clean (about 45 minutes). Let cool for 5 minutes. Turn out on rack and let cool completely.
