Bacon & Egg Oven Pancake
Bacon & Egg Oven Pancake Recipe
- 1 T. butter
- 2 large eggs, beaten
- ½ cup whole or 2 percent milk
- ½ cup flour
- ¼ t. salt
- ¼ cup fried and chopped bacon pieces
Preheat oven to 425 F. Heat 12-inch cast iron skillet on stove top. Melt butter in skillet. Add milk to beaten eggs and whisk. Sift flour and salt into mixture and whisk until blended. Pour into skillet. Sprinkle bacon pieces on top and fry 1 minute. Place in oven and bake 10-12 minutes. Serve hot with powdered sugar, syrup or your choice of topping.
